Luscious Lime Chicken Fajitas

Absolutely fabulous!!

First, cook onion strips & mushroom slices in 2 T butter. When onions are cooked through, remove onions and mushrooms with a slotted spoon, leaving butter in frying pan. Add 2 T butter to pan.

Season one side of chicken tenders with garlic, salt, cumin and cilantro.
Cook chicken in butter, seasoned side down. Cook on medium heat 1 minute.

Next, add 1 cup lime juice to pan, pouring over chicken. While chicken is cooking, season the side that is facing up. Cook 4 minutes or until the top edges become white. Flip chicken and cook another 2 minutes or until chicken is cooked through and lime juice is cooked out.

Slice chicken into fajita strips and serve with the onions and mushrooms and other fajita toppings and sides.
